Ingredients

  • 1 cup Self-raising flour
  • 1 teaspoon Sugar (for the batter)
  • 1 Egg
  • 50ml Milk
  • 50g Roasted salted peanuts
  • 50g Sugar (for sugared peanuts)
  • 4 tablespoon Creamed corn
  • Butter to pan-fry the pancake

Method

1) Mix flour, 1 teaspoon of sugar, egg, and milk in a mixing bowl. Cover with a cloth and set aside to rest for 30 minutes.

2) Crush the peanuts with a food processor or blender. Pour the crushed peanuts into a bowl and add 50g of sugar. Mix well.

3) Heat up a pan and butter it well. Pour in a thin layer of pancake batter and turn the heat to medium. Before the centre of the pancake is fully cooked, add the sugared peanuts and creamed corn. Fold the pancake into half and remove from pan.

4) Serve immediately.

*Top tip: For an indulgent finish, why not add a scoop of vanilla ice cream?
