Mak Tok’s Roast Duck
With Mak Tok’s Signature and Sweet Chilli Paste
1) Preheat oven to 190°C.
2) Rub salt to the duck and marinade with Mak Tok’s Signature Chilli Paste for an hour in a baking tray.
3) Place the duck into the oven and roast for 2 hours 15 minutes. 20 minutes before the duck is done, take it out from the oven and flip it. Place it on a rack and continue roasting the duck in the oven.
4) Remove the duck from the oven. Serve with Mak Tok’s Sweet Chilli Paste and a bowl of warm rice.
*Top tip: The longer you marinate the duck, the tastier it will be. I personally would suggest leaving it to marinate overnight in the fridge.
