The Sweet Chilli Stir-fry Chips dish is perfect for using up left over chips and spare vegetables into a perfect main, side or snack. The sweet chilli stir-fry chips are easy to prepare and cheap. They can be made in minutes! With incredible flavours and a hint of chilli, these are certainly not your standard chips you would get from your local pub!

  • 2 tablespoon Mak Tok's Sweet Chilli Paste
  • 150g Leftover chips/fries
  • 2 different colour Bell peppers (sliced)
  • 1 Onion (sliced)
  • 1.5 tablespoon Soy sauce
  • 1 tablespoon Oil for frying
  • handful of Chopped coriander and sesame seeds for garnishing

1) Finely slice the onions and cut the bell peppers in half, scraping the pith and seeds out, then slice.

2) Heat up a wok or non-stick frying pan and add a drizzle of oil into it. Once the oil and wok are hot (slightly smoking), add the onion and stir-fry until lightly brown before adding in the bell peppers.

3) Now, add the chips and continue stir-frying before adding Mak Tok’s Sweet Chilli Paste. Ensure all the ingredients are coated well. Follow up by pouring in the soy sauce and give it a final stir on high heat for 1-2 minutes.

4) Now its oozing with sweet and spicy flavours, plate the sweet chilli stir-fry chips and garnish with coriander and sesame seeds.

*Top tip: reduce the amount of soy sauce by 1/2 a tablespoon if your leftover chips/fries were already salted.

*Top tip: if you need more flavour or chilli, add an extra tablespoon of Mak Tok’s Sweet Chilli Paste.

If you are looking for a healthier alternative, why not replace the chips for sweet potato?
