  • 1 cup Plain flour
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 3 tablespoon Sugar
  • tiny bit of Icing sugar

Don’t know what to do with some spare bananas that are slightly going over? Why not try banana fritters, also known as Cokodok! Fry to perfection and they are sweet and soft, a scrumptious dessert anybody would want to eat. So tempting…

1)Remove the bananas from its skin and mash them up in a bowl. Add the sugar, baking soda, baking powder, and plain flour to the mashed bananas one at a time. Mix well until it turns into a thick batter.

2)In a wok or a deep pan, add oil and heat it up. Test the oil with a tiny bit of batter and if it sizzles and floats, your oil is ready. Do not leave the hot oil unattended.

3) Scoop the batter using an ice cream scoop and place the batter carefully into the oil. Deep fry until golden brown. Remove the banana fritter one at a time from the oil and drain with a strainer.

4)To serve, arrange the banana fritters on a plate and sprinkle some icing sugar before serving.

Top tip: The riper the bananas, the sweeter your cokodok will be.

Top tip: Add a scoop of vanilla ice cream on the side to make it extra tasty!
