Sticky Rice with Sweetened Coconut (Pulut Inti)

Ingredients

  • 50g Palm sugar/Dark brown sugar
  • 50g Desiccated coconut
  • 1/4 teaspoon Salt
  • 200g Glutinous rice
  • 50ml Coconut milk
  • 25ml Water

Method

1) Soak the glutinous in water for at least hours. After that, drain the water and place it in a steamer. Steam for 15 minutes before adding coconut milk and a pinch of salt to the glutinous rice. Mix well and steam for a further 10 minutes. Remove from steamer and set aside to cool.

2) Boil water in a pan and add palm sugar in it. Allow it to completely dissolve before adding in the desiccated coconut and salt. Lower the heat and continue frying the sweetened coconut for 2-3 minutes.

3) Take a decent amount of glutinous rice and shape it into a square. Top it off with some sweetened desiccated coconut and enjoy.

Top tip: add some butterfly pea flower extract/blue colouring to the glutinous rice.
