1) Preheat oven to 175 Celcius.
2) Mix Mak Tok’s Sweet Chilli Paste, ginger, garlic, chilli, and fish sauce in a bowl. Add some lime zest and lime juice to the sauce.
3) Lay parchment paper on a baking tray and add some sauce to it. Place the fish on top of the sauce and add the remaining sauce onto the fish. Sprinkle some coriander before wrapping up the fish into a parcel. Bake in the oven for 15 minutes.
4) Remove from oven and open the parcel carefully. Garnish with remaining coriander and serve while is hot.
*Top tip: make sure your parchment paper is large enough for the size of your fish.
