1) Soak the glass noodles in hot water for about 7 minutes. It should be done when it turns translucent and is soft and slightly chewy. Drain and set aside.
2) In a bowl, add Mak Tok’s Satay Chilli Paste, Chinkiang vinegar, soy sauce, chopped peanuts, and sesame oil. Mix well before adding in the coriander and spring onions.
3) Add the glass noodles into the paste and mix it all. Enjoy!
Top tip: Spaghetti works well too if you don’t have glass noodles.
