1) Blend all the mushrooms in a food processor until you get a paste. Pour the paste to a mixing bowl and add the seasonings (onion powder, garlic powder, smoked paprika, salt, vegetable bullion). Add plain flour and glutinous rice flour to the paste. Mix well until you get something like a cake batter.
2) Pour oil into a deep pan (or deep fryer) and heat it up.
3) Scoop a small portion of the mushroom paste and coat the outer part with cornflour before gently placing it into the deep fryer. Cook until golden brown, remove and set aside to cool. Vegan wings are done!
4) In a clean frying pan, add water and Mak Tok’s Sweet Chilli Paste with a pinch of salt. Gently cook it on low heat for 30 seconds before adding in the vegan wings. Coat it well and garnish it with chopped spring onions and sesame seeds before serving.
*Top tip: the glutinous rice flour is important to give it a slightly chewy texture.
