  • 1.5 cup Jasmine rice
  • 1.5 cup Water
  • 3 tablespoon Mak Tok's Ltd Ed. Pineapple Relish
  • 2 teaspoon Salt
  • 4 pcs Crabsticks (sliced)
  • 2 pcs Frankfurter (sliced)
  • 1/2 pcs Red bell pepper (diced)
  • 30g King Prawns
  • 10g Coriander/Parsley (chopped)
  • 350g Pineapple (diced)
  • 20g Frozen peas
  • 2 Eggs
  • 3 tablespoon Oil
  • 1 teaspoon Turmeric powder
  • handful Cashew nuts for garnishing


1) Rinse rice with water for at least 5 times or until water turns clear. Cook the rice in a rice cooker or pot with 1.5 cups of water. Once done, fluff the rice and set aside to let it cool completely (usually takes 2 hours).

2) Add oil in a wok and heat it on high. Once the oil is hot, add the rice into the wok and stir well. Create a well in the centre and add an extra bit of oil before adding in the egg. Scramble the egg well before mixing it with the rice.

3) Add turmeric powder and Mak Tok’s Ltd Ed. Pineapple Relish. Stir well. Keep the heat on high and add the rest of the ingredients. Continue to fry the rice for 8minutes before seasoning with salt.

4) Garnish with some cashew nuts and serve while it’s hot.

Top tip: Cook the rice a night before for it to dry out a little and cool down completely. This will prevent your fried rice from turning to soggy/watery.
