Ingredients (Chicken version)
Nasi Lemak Chicken Burger
1) Preheat oven to 175’C. Marinade chicken breast with Mak Tok’s Signature Chilli Paste and salt for 5 minutes. Place chicken on a tray and pop it in the oven for 20 minutes.
2) In a pan, add enough oil for deep frying and heat it up on medium heat. Once the oil is hot, add one egg at a time and deep fry until the outer part of egg white is crispy and golden brown – leaving the yolk runny. Remove from pan once done and drain off excess oil with a piece of kitchen towel.
3) Pound or grind the anchovies until fine.
4) Spread peanut butter on both sides of the burger bun and sprinkle desiccated coconut on them. Assemble the burger starting with the bottom of the bun, cucumber, chicken, Mak Tok’s Signature Chilli Paste, fried egg, pounded anchovies, and finally the top of the bun.
Top tip: you can substitute this with salted vegetable crisps
