1) Skin the potatoes and cut them into cubes. Bring a pot of water to boil and cook the potatoes until soft. Drain the water and set aside.
2) Add potatoes into a bowl and mash them. Add salt and black pepper to taste. Now, add the coriander/parsley and red onion to the mashed potato and mix well.
3) Oil up a pan and turn on the fire to medium. Grab a good chunk of mashed potatoes mixture and roll it into a ball whilst gently applying pressure to flatten it to a patty.
4) Pan fry the patty until golden brown and serve with Mak Tok’s Sweet Chilli Paste.
*Top tip: Add an egg to prevent the patty from falling apart. If you are on a vegan diet, try soaking some chia seed with warm water for 15 minutes. The water used to soak the chia seed will act as the binder – similar to what an egg can offer.
