1) Add the plain flour, tapioca flour, egg, soy sauce, and water in a mixing bowl and mix well. Allow batter to rest for 5 mins.
2) Slice the leek and mince the prawns before adding into the batter. Mix well.
3) Add oil to a hot pan (or skillet) and gently pour in a scoop of batter. Once the sides of the batter changes colour (slightly hardens), it’s time to flip! Cook for another 2-3 mins.
